I'd like to get a pack of color schemes for Windows 7. I've been always using 'Rainy day' on Windows XP, which is just 'easier' for the eyes. Since Windows Vista, they stopped shipping the default color schemes. I'd like to use them (again?). Is there a pack? Or a link where to get some? (I really tried to google around, but i failed.)

I don't know of any source for color packs, but the colors for window borders are just saved as registry values, which you can edit yourself. Export
HKCUControl PanelColors from an account on an XP machine with the colors you want, then import that registry file on your windows 7 box. Log out then back in, and it should be set to those colors.
Regarding your defense of Windows Classic though, I must disagree. I used the classic themes on XP almost always, because Luna was, well, hideous. But I'm curious - what kind of graphics card do you have? My computer here has Intel integrated graphics 945GM, the oldest, crappiest integrated graphics chip which runs aero. Everything is completely smooth. Also, they do include some themes, quite a few of them in fact. You can change the colors, backgrounds, etc. as you wish. As for battery, that's true, but you can set it to disable transparency when running on battery, which gives much better battery life. I've found that the benefits aero brings far outweigh its supposed ugliness.. being able to preview which window I'm switching to, the images on the taskbar, the see-through Alt-Tab, etc. are all quite helpful features, in my opinion.
But anyhow, each to his own. Hopefully that'll help with getting your theme set up the way you'd like.. after all, we should each use what we like best, not what some random guy on the internet says he likes ;)

After setting up the OS, I changed some of the system colors through the links “Personalization -> Window Colors -> Advanced Appearance” to provide an application window with Black background and White text arrangement, instead of the normally inverted options, to enable me to view the screen without eye strain, as I am a visually challenged person.
But in that process the background and font colors of several other controls got changed, without my knowledge or intention, and leading to unreadable texts – e-g: The options in a Drop-down List, Labels on control buttons (“OK”, “CLOSE” etc.). As these seem to change randomly, without my being able to identify what changes are made, and I am unable to change these, even by reverting back to the normal colors for the application windows, I am forced to work with quite a few unreadable parts in my window areas, causing me extreme difficulty.
Now I would like to know the relations between the various window system colors and how to make the desired changes for the windows through the above mentioned Personalization link, without the colors of the other controls getting changed arbitrarily.
I would be extremely grateful to anybody who can direct me appropriately.

Scenario: On a 3 screen (1920x1080 each) setup ran on an ATI HD4890 (1gb RAM, running 2 screens) + HD 3450 (256mb RAM, running 1 screen), whenever anything graphic intensive is put onto the screen hosted by the HD3450, Windows will complain 'The color scheme has been changed to Windows Basic - The current color scheme has exceeded its allowed memory so the color scheme has been automatically changed to improve performance. Click to see more information.' and change my theme to Windows Basic. However, it is to be noted that the 3450 is not being stressed at all (all the load is being put onto the 4890 according to GPU-Z). It should not be a problem with system RAM (6gb, on Win7 x64) nor processing power (i7 920). Is there a way to disable Windows automatically 'improving performance' by switching my theme?

If you want to choose a custom color, click the Show Color Mixer button in the Windows Color and Appearance window; then fine-tune the selected hue, saturation, and brightness.
